Ingredients:
1 orange
1 fennel bulb, pitted and cut into thin slices, reserving ¼ cup of leaves
1 yellow bell pepper, thinly sliced
2 tablespoons of olive oil
4 skinless salmon fillets
Salt and pepper to taste
â…“ cup pitted black olives cut into quarters
Method of preparation:
1- Start heating the grill. Grate a tablespoon of orange zest and then cut the orange into slices.
2- Then, in a baking dish, mix the orange zest and slices, fennel, bell pepper and oil and arrange them in an even layer.
3- Add the salmon. Season everything with salt and pepper to taste. Grill the salmon and vegetables for 8-10 minutes. Serve with the olives and fennel leaves.
