Wonderful Healthy Oat And Plum Muffins Recipe

You can’t go wrong with these oat and plum muffins. They’re delicious and healthy. The recipe is by nutritionist Cátia Carvalho Silva.

Ingredients: 

2 whole eggs

200 ml natural yogurt

3 tablespoons of oat flakes

3 tablespoons of shredded coconut

40 g crushed walnut kernels

3 teaspoons honey

1 teaspoon baking powder

Cinnamon powder to taste

2 plums

Directions

1- Preheat the oven to 180ºC.

2- Beat the eggs with the natural yogurt.

3- Add the remaining ingredients, except the plums, and mix well.

4- Wash the plums, remove the stones and break them into small pieces.

5- Place the pieces in the prepared dough and mix well. Distribute the dough into small molds.

6- Bake for about 20 minutes.
