Never Tried Avocado Ice Cream? Here’s the Recipe

Hot days call for refreshing and delicious ice creams. Do you agree? You need to start rolling up your sleeves and making your own creations. Need some ideas? Follow Martha Stewart’s lead and make an avocado one. 

Ingredients:

2 medium avocados cut in half, pitted and peeled

1 can of coconut milk

½ teaspoon grated lemon zest, plus 3 tablespoons fresh lemon juice

¾ cup sugar

¼ teaspoon salt

Directions 

1- Smash the avocados. Then, in a blender, combine the avocados, coconut milk, lemon zest and juice, sugar, salt and 1/4 cup of water. Blend. Place in the fridge for an hour or overnight.

2- Freeze the mixture in an ice cream maker according to the manufacturer’s instructions. Transfer to a loaf tin and freeze, wrapped in plastic, for up to a week. Leave to soften at room temperature 20 minutes before serving.
